Gluten Free Waffles
Ingredients
- 2 large eggs
- ¼ cup caster sugar
- 2 teaspoons vanilla extract
- ½ cup vegetable oil
- 2 cups gluten free plain flour
- 4 teaspoons baking powder
- ¼ teaspoon salt
- 1¾ cups milk
Instructions
- In a big mixing bowl, whisk together the eggs, caster sugar, vanilla, and vegetable oil until smooth.
- Sift in the gluten free flour, baking powder, and salt. Mix until just combined.
- Slowly add the milk, stirring until you have a silky batter with no lumps.
- Heat your waffle maker and give it a light spray with oil. Scoop the batter in and cook until golden brown and crisp.
- Stack them up and top with butter, maple syrup, berries, or whatever you fancy.
