  • 2 large eggs
  • ¼ cup caster sugar
  • 2 teaspoons vanilla extract
  • ½ cup vegetable oil
  • 2 cups gluten free plain flour
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • cups milk

Instructions

  • In a big mixing bowl, whisk together the eggs, caster sugar, vanilla, and vegetable oil until smooth.
  • Sift in the gluten free flour, baking powder, and salt. Mix until just combined.
  • Slowly add the milk, stirring until you have a silky batter with no lumps.
  • Heat your waffle maker and give it a light spray with oil. Scoop the batter in and cook until golden brown and crisp.
  • Stack them up and top with butter, maple syrup, berries, or whatever you fancy.

Notes

Any leftovers? Keep them in an airtight container or freeze for later.

Handy Tips

  • Crispier edges: Swap ¼ cup of the milk for soda water.
  • Flavour boost: Add a teaspoon of cinnamon or mixed spice to the batter.
  • Make ahead: Cook, cool, then freeze waffles. Reheat in a toaster for a quick brekkie.
  • Dairy-free option: Replace milk with almond, oat, or soy milk.
  • Chocolate twist: Fold through ½ cup choc chips before cooking.
