caster sugar

vanilla extract

vegetable oil

Instructions
In a big mixing bowl, whisk together the eggs, caster sugar, vanilla, and vegetable oil until smooth.
Sift in the gluten free flour, baking powder, and salt. Mix until just combined.
Slowly add the milk, stirring until you have a silky batter with no lumps.
Heat your waffle maker and give it a light spray with oil. Scoop the batter in and cook until golden brown and crisp.
Stack them up and top with butter, maple syrup, berries, or whatever you fancy.
