- 3 very ripe bananas mashed
- 1 teaspoon bicarb soda
- 1/3 cup unsalted butter melted
- 3/4 cup caster sugar
- Pinch of salt
- 2 large eggs beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free plain flour
Preheat your oven to 175°C (160°C fan-forced).
Grease a standard loaf tin (roughly 20cm x 10cm).
In a large bowl, mash the ripe bananas until they're smooth.
